At Bee Great, we never stop coming up with new ways to enjoy our delicious, raw, Indiana wildflower honey. The process we use to make Tequila Barrel Honey is the key to its flavor.
It's all about the barrel. We source our barrels one-at-a-time from a warehouse full of Jose Cuervo tequila.
We add margarita mix and turn the barrel every day to ensure every pore of the wood grain soaks up the complex flavors of the agave nectar and the mix. Then we empty the barrel and fill it with Bee Great wildflower honey and let it age. Once more, we turn the barrel daily by hand. The result is a sweet honey that cuts the sourness of the lime and heightens the sweet vanillin compounds in the oak for the ultimate compliment to the lingering flavor of roasted agave. To put it another way - it's the honey Jimmy Buffett wishes he could find in Margaritaville!
Unlike other large manufacturers, we never heat our honey to high temperatures, and we age it one bucket at a time to take on the best flavors from the barrel. We use a handmade hoist to empty the barrel by hand.

Uses:
There is no better way to enjoy this honey than drizzled on cheesecake or key lime pie. It's the perfect addition to peach smoothies too. [Just blend ice, vanilla yogurt, fresh peaches, and honey together]. It adds something special to a cheese tray, and wow does it go great on sponge cake with a little whipped cream. And, it's exactly what your favorite cocktail needs to sweeten it up a bit. Pour it on a plate and cover the rim of your margarita or lemonade glass before sprinkling the rim with salt or sugar.
